Pumpkin Pancakes 🥞 You’ll need: •1 1/2 cups of flour •3 tsp of baking powder •2 tbsp of brown sugar •1 tsp of salt •1 tsp of ground cinnamon •1 tsp of pumpkin pie spice •1 cup of buttermilk (or milk) •1 cup of pumpkin purée (not pumpkin pie filling) •2 large eggs •1 tsp of vanilla extract •cooking spray Instructions: •Whisk together flour, baking powder, brown sugar, salt, and spices in a large bowl. •In another bowl mix the milk, pumpkin, eggs, and vanilla together. •Add the wet ingredients to the dry and combine them. •Prepare the griddle with cooking spray and heat it to medium heat (or 350 degrees F) •Pour batter onto the griddle and cook until the edges are brown, then flip to cook the other side. •Top with butter, cinnamon whipped butter, syrup, whip cream, pecans, bananas, or blueberries and enjoy!
