Taco Tater Tot Casserole

Happy Cinco de Mayo! This Taco Tater Tot Casserole is an easy dish to throw together to celebrate Taco Tuesday/Cinco de Mayo! Your kids are sure to love it!⁣ ⁣ Ingredients:⁣ A pound of Ground Beef⁣ 1 Package Taco Seasoning⁣ 1 Can Corn⁣ 1/2 Cup Water⁣ 1 Can Black Beans⁣ 3 Cups Shredded Cheese⁣ 1 Bag Tater Tots⁣ Tomatoes, lettuce, olives, and sour cream to garnish⁣ ⁣ Directions:⁣ Start by browning your ground beef in a medium pan over high heat.⁣ ⁣ Once the meat is completely browned, mix in your taco seasoning and water and simmer for five minutes.⁣ ⁣ Next, mix in your corn, 2 cups of cheese, and black beans before spreading into the bottom of a 9 x 13 baking dish.⁣ ⁣ Top with Tater Tots (you do not need to arrange them perfectly, they cook the same no matter what).⁣ ⁣ Sprinkle the remaining 1 cup of cheese over the top, and bake at 350 degrees for 20 minutes.⁣ ⁣ Top with lettuce, tomatoes, olives and sour cream!
